Columbia Dining Evolves to Meet Growing Student Needs

The Columbia Dining program grows and changes as the student body needs – and stomachs – necessitate! This year was no exception, and so Dining introduced not one, but two new options for the student community. 

In September 2021, Columbia Dining @ Faculty House introduced students to a culinary collaboration for the ages. The pop-up lunch location offered a grab-and-go lunch featuring student favorites and most requested John Jay dishes, cooked up by the esteemed culinary team at Faculty House. Based on feedback from popular items, the Faculty House menu features fresh, wild caught Atlantic salmon each day, a dressed-up mac and cheese, a vegan entrée, plus a starch, veggie, salad, plus fruit or dessert. In addition to the delicious food offerings, students were so excited to visit a new location on campus and enjoy views from the 4th floor overlooking Morningside Park. 

In January 2022, Chef Mike’s Sub Shop at Uris Deli opened for lunch and dinner service, Monday-Friday, 11:00 a.m. – 7:00 p.m. Chef Mike’s Sub Shop serves up – you guessed it – subs! But not just any subs. Subs like Chef Mike’s own grandmother used to make. Every day features a selection of hot and cold oversized subs, prepared fresh by the team. Of note is the Chef Mike’s Grandma’s Special (the inspiration for the sub shop): Italian sausage and sautéed broccoli rabe doused with roasted-garlic infused olive oil. A vegan version made with Beyond Sausage will also be served. Each sub is paired with a choice of soup, fruit, dessert, and beverage.  

Both eateries have been welcome additions to the student dining portfolio – quickly becoming campus favorites and earning high praise. In response, the Sub Shop and Faculty House are planning to expand service for the upcoming 2022-23 academic year.
